Red Star Yeast Company is an American baker's yeast producer headquartered in Milwaukee, Wisconsin, that ferments sugars into fresh, active dry and instant yeast for commercial bakeries, food manufacturers and home bakers, sold under the Red Star, Saf-Instant and Saf-Pro names in conventional, organic and non-GMO forms. The brand goes back to 1882, when a Milwaukee distillery began selling the compressed yeast that came off its whiskey production as a by-product, and the business turned to yeast alone during Prohibition. It reached its present form in stages: the French yeast group Lesaffre bought the Red Star division from Sensient Technologies in 2001, then set the business up in 2004 as a joint venture with Archer-Daniels-Midland, whose corn sweetener supply is the fermentation feedstock. Production runs from plants at Cedar Rapids, Iowa, opened in 2006 and since expanded into one of the largest yeast factories in the world, and at Headland near Dothan, Alabama.
